Important recognition for Dyfi Biosphere food. Darllen yn Gymraeg.

Chef Mauro Colagreco is a UNESCO Goodwill Ambassador. He advocates for local, sustainable ingredients and traditional culinary techniques, as well as UNESCO’s actions for biodiversity, in particular its Man and the Biosphere Programme of which our Biosphere is a part. He represented UNESCO at the COP16 Biodiversity Conference in Cali where he said: "At a time when over one million animal and plant species are at risk of extinction, sustainable food choices can make a real difference for the planet."

In March he organised a seven-course meal featuring ingredients from all seven UK Biospheres, which was served at Raffles in London. We were delighted that Machynlleth producer collective Tymhorau was able to supply saltmarsh lamb for the meal.

Tymhorau say:

"Our meat producers care for their animals using practices which support the environment. They often choose heritage breeds which have been bred for generations to thrive in our climate, meaning the animals spend their lives outside in the beautiful Cymraeg countryside, living a more natural life, and require less grain and other inputs, cutting down on the travel miles of your food."
